Antioxidant
A Sodium salt of erythorbic acid, a synthetic isomer of vitamin
C but with only 1/20 of the vitamin activity. Sodium erythorbate
is produced from sugars derived from different sources, such
as beets, sugar cane, and corn.
In combination with sodium nitrite E251,
it totally prevents the growth of strains of Bacillus cereus.
An antioxident used in meats, poultry, and soft drinks.
