Potassium ascorbate is the potassium salt of ascorbic acid.
Ascorbic acid is a sugar with anti-oxidant properties that occur
naturally in most fruit and vegetables. Acts as a preservative
by inhibiting the effects of oxygen on food (antioxidant)
Ascorbic acid and its sodium, potassium, and calcium salts
are commonly used as anti-oxidants, preservatives, and a source
of vitamin C in foods
Used in many foods including dairy based drinks, condensed
milk, processed cheese, dairy bases desserts, fat spreads, canned
or bottles vegetables, breakfast cereals, pre-cooked pasta,
batters, egg-based desserts, vinegars, and mustards.
