An acidity regulator. All propionates are thought to be linked with migraine headaches. Propionates occur naturally in fermented foods. It is derived commercially from ethylene and carbon monoxide or propionaldehyde, natural gas or fermented wood pulp. It is produced when bacteria decompose fibre.
