An acidity regulator.

A by product in the manufacture of wood alcohol. Used to make acetic acid (vinegar), to control the acidity of food during processing, as a thickening agent in cake mixes, packet desserts and puddings, a calcium supplement in pet foods, and as a preservative against microbial growth.

Known to have caused mutagenic defects in laboratory tests.
