Antioxidant
Octyl gallate is the ester of octanol and gallic acid. As a
food additive it is used under the E number E311 as an antioxidant
and preservative. See E310
Used in oils, margarine, lard and salad dressings.
It is degraded in the intestine to octanol and gallic acid.
Gallic acid can cause eczema, stomach problems and hyperactivity.
Not recommended to be consumed by children.
